Our days have been rather uneventful lately, so I thought I would add another recipe. The Cabbage Salad recipe was per Rachel's request. But I thought of my daughters who like Hummus when I tried this recipe. It is very easy and the cost is much less than buying it pre-made.
I used my hand held blender instead of a food processor. The food processor would probably work better if you have one.
Ranched-up Hummus Dip
1 16-oz can garbanzo beans, rinsed and drained
1/4 c. Ranch light dressing
3 T. warm water
1 T. lemon juice
1 clove garlic
Combine garbanzo beans, salad dressing, water, lemon juice and garlic in food processor. Process until smooth. Serve as a dip with vegetables, pita wedges, crackers, etc.
